For a faster preparation time, start with chicken breasts. Cut your thin chicken breasts in half by a sharp fillet knife to make 4 fillets. Thinner chicken breast cooks evenly and faster.

Ingredients

  • For The Chicken:
  • 2-3 large boneless and skinless chicken breasts halved horizontally to make four
  • 1 tsp garlic powder
  • 4 Tbsp flour (all purpose or plain)
  • 2 tsp salt
  • 4 tbsp fresh, grated Parmesan cheese
  • 1/2 tsp Black cracked pepper
  • For The Sauce:
  • 2 tsp butter
  • 5 tsp olive oil
  • 1 whole head of garlic peeled and divided into 10-12 cloves
  • 1 whole head of onion, sliced
  • 1 small onion finely chopped
  • 1 1/4 cup half and half or heavy cream (or evaporated milk)
  • 1 1/4 cup chicken broth (stock)
  • 2 tsp fresh parsley, to serve
  • 1/2 cup finely fresh, grated Parmesan cheese

Instructions

  1. Season both sides of the chicken breasts fillet with pepper and salt.
  2. Heat the butter and oil a deep skillet over medium heat.
  3. Add the chicken breasts and cook on both sides until golden brown.
  4. Remove the chicken to a plate. Set aside. To keep it warm, cover the plate with aluminum foil.
  5. Add the remaining butter and oil to the same skillet. Once melted, first, add the sliced onions. Cook until the onions are caramelized, then add garlic cloves. Cook for 2-3 minutes more until fragrant.
  6. Add the chicken broth and simmer until reduced by half about 3 minutes over medium heat.
  7. Slowly add the cream and simmer until thickened about less than 5 minutes.
  8. Add the fried chicken back to the skillet and coat with the delicious sauce.
  9. if desired, garnish with minced parsley.
