This recipe uses evaporated milk and cream together! If you haven’t heard this before, prepare to be surprised. Evaporated milk is quite creamy and does not cause separation with high heat like you encounter in meals cooked with heavy cream only, and this provides a lot of movement space. In addition, cream needs to be added because the sauce has a very silky texture after it cools and helps to hold the ingredients together.

Since the rest of the meal is quite spicy and challenging, we start our meal by frying the potatoes in the classic way everyone knows. At this stage, you can use any frying method you want. No pressure. You are just a few steps away from reaching this perfect taste!

CRAWFISH FRIES WITH CREAMY QUESO SAUCE RECIPE

Ingredients

  • For Crawfish Fries:
  • 1 lb crawfish tails
  • 3 TBS butter
  • 1 TBS minced garlic (optional)
  • 1 TBS Cajun seasoning and also any other desired seaosing
  • 2 tsp liquid crab boil
  • 1 tsp onion powder
  • For Queso Sauce:
  • 12 ounce can evaporated milk
  • 1/2 cup heavy whipping cream
  • 2 tsp Cajun seasoning and also any other desired seaosing
  • 1 tsp onion powder
  • 1 cup shredded Muenster
  • 1 cup shredded Monterey Jack
  • 1/2 cup shredded Mozzarella
  • 1/2 cup parmesan
  • 30-32 oz frozen fries of choice
  • Fresh parsley to garnish

Instructions

    For Crawfish:
    1. The butter is melted in the pan, garlic is added, and after sautéing for 30 seconds, the crawfish is added.
    2. The crab boil, Cajun seasoning and onion powder are sprinkled over the crayfish and sautéed on medium heat for 4-5 minutes, then removed from the pan and kept warm.

    For Queso Sauce:
    1. Evaporated milk and cream are poured into the pan and only heated without boiling.
    2. After sprinkling with Cajun seasoning and onion powder, cheeses are added.
    3. Stir constantly until the cheese melts and the prepared sauce coats the spoon. After 4-5 minutes of boiling, the bottom is closed. The sauce will thicken as it peels.
    4. After the desired potatoes are fried as desired, crawfish, queso sauce and parsley are added on it, respectively.
    5. Bon Appetit.
