Ingredients

  • 1 Chicken breast
  • Pickle juice
  • 1 Egg
  • ½C Panko breadcrumbs
  • 1TB Powdered sugar
  • Salt & Pepper
  • ½CFlour
  • ¼CCorn Starch

Instructions

    1. Chicken pickle brine: Cut chicken breast into one inch pieces and cover in pickle juice and let sit for at least 20 minutes (longer the better)
    2. Dredge: combine the flour, cornstarch, panko, and powdered sugar, pinch of salt and pepper into a bowl and mix
    3. Egg wash: x1 egg salt & pepper, beat it
    4. Coating the chicken: Take chicken out pickle juice and pat dry with paper towels, and dip in egg wash then cover in dredge and place on a separate dish, rinse and repeat for all the nuggets
    5. Bring canola oil or any frying oil up to heat (375) or check with chopstick (when you place chopstick into oil and bubbles form oil is ready) fry nuggets for 3-4 minutes each side or until golden brown, do this in batches to prevent overcrowding, and take out and place on paper towel lined plate

      Serve with fries & EAT
